Preheat oven to 450F

Pre heat oven to a high temperature: 450F (230 C). At this temperature, the quails are done very quickly and all the taste and moist is still inside the quail because of the fast searing.

This way the small birds won’t become dry.

Roasting, 10-12 min

Use a little bit of lemon juice, pepper and salt to bring the birds to taste. Put a cube of butter on top of every bird. Now roast them in the oven for 10-12 minutes.

Sear on stove-top

Add quails to a pan after you take them out of the oven. (Personally, I use a cast-iron pan, which goes in the oven from the beginning.) Set on high heat, add some more butter and lemon juice and let it cook a few minutes. There you have it, a very easy quail sauce.
